- 1/2 tsp Mustard Seed rai
- 1 spring Curry Leaf
- 1/4 tsp Asafoetida hing
- 1/4 tsp Turmeric haldi
- 1.5 tsp Salt or to taste
- 1 tbsp Coriander chopped, dhania. add more if desired

- 1/4 cup Horse Gram Flour kulith
- 1 cup Water add more if needed to reach desired consistency
- 1 tbsp Lime Juice adds a nice tang, optional
- 1 tbsp Vegetable Oil refined oil, vegetable oil can be substituted
Instructions
Preparing the Base
- Heat the oil in a pan over medium heat. Add the mustard seeds and let them splutter.
- Add the chopped onion and curry leaves, sauté until the onions turn translucent.
- Add the minced garlic, chopped tomatoes, and green chilies. Cook until the tomatoes soften and become mushy.
Incorporating the Flour
- Stir in the asafoetida and turmeric powder. Add salt to taste.
- In a separate bowl, whisk the horse gram flour with a little water to form a smooth paste. Gradually add this paste to the pan, stirring continuously to prevent lumps from forming.
- Pour in 1 cup of water. Bring the mixture to a simmer, then reduce heat to low and cook until the horse gram flour is cooked and the curry has thickened. Stir occasionally to prevent sticking.
