Ingredients
 

For the Horse Gram

  • 1 cup Horse Gram also known as kollu paruppu in tamil and kulthi beans in hindi. rinse thoroughly before cooking., kollu paruppu, kulthi beans
  • 2.5 cup Water adjust as needed for desired consistency.
  • 0.5 tsp Castor Oil
  • 1 Tomato large, ripe tomato.
  • 0.25 tsp Turmeric

Prepare the Horse Gram

  • Thoroughly wash one cup of horse gram in a bowl.

Pressure Cooker Method

  • In a pressure cooker, combine 2.5 cups of water, 0.5 tsp castor oil, 0.25 tsp turmeric powder, and one large tomato.
  • Add the washed horse gram.
  • Close the cooker and cook for 3 whistles.

Stovetop Method

  • In a pot or pan, heat 3 cups of water. Once hot, add the washed horse gram.
  • Add 0.5 tsp castor oil and one large tomato. Simmer for about 15 minutes.
  • Stir in 0.25 tsp turmeric powder and cook until the horse gram is tender.

Drain and Set Aside

  • Once cooked, drain any excess water from the horse gram and set aside.

Prepare the Tempering

  • In the same pot or pan, add 0.5 cup of chopped shallots, 3 red chilies, 1 sprig of curry leaves, 4 minced garlic cloves, 0.5 tsp cumin seeds, and 1 tsp coriander seeds. Saute for about 10 minutes until fragrant.

Blend the Spices

  • Transfer the sautéed spices, chopped coriander leaves, and cooked horse gram to a blender or food processor. Grind to a semi-coarse paste. You may add some of the reserved horse gram cooking water if needed, for desired consistency.
  • (Alternatively, use a traditional stone grinder for a superior flavor.)

Serve

  • Your Kongu Kollu Paruppu is ready! Garnish with ghee or coconut oil and serve hot with white rice.
