Soaking the Grains

  • Wash the horse gram and fenugreek seeds thoroughly. Soak them in 1 cup of water for at least 5-6 hours, or preferably overnight.
  • Wash the millet and brown rice. Soak them separately in 1-2 cups of water for the same duration.

Grinding the Batter

  • Drain the water from the soaked horse gram and fenugreek seeds. Grind them into a smooth batter using a wet grinder or blender, adding water as needed to achieve a pourable consistency.
  • Drain the water from the soaked millet and brown rice. Grind these into a separate smooth batter using the same method.

Combining and Fermenting

  • Combine both batters in a large bowl. Add salt and mix thoroughly. Cover the bowl and let the batter ferment in a warm place for 8-12 hours, or overnight. The batter should increase in volume and become slightly fluffy.

Steaming the Idlis

  • Lightly grease your mini idli molds with oil or ghee. Pour the fermented batter into the molds, filling them about ¾ full.
  • Steam the idlis in a preheated idli steamer for 10-15 minutes, or until they are cooked through and easily release from the molds.

Serving

  • Carefully remove the idlis from the molds using a spoon or spatula. Serve hot with your favorite chutney and sambar.
