Prepare the Rose Idli Batter

  • Combine the idli batter, rose syrup, jaljeera powder, gulkand, salt, and carom seeds in a large bowl. Mix thoroughly until well combined.

Incorporate the Leavening Agent

  • Just before steaming, add the Eno fruit salt to the batter. Gently mix for about 30 seconds. Do not overmix.

Steam the Idlis

  • Lightly grease an idli steamer or mold with butter. Pour the batter into the molds, filling them about ¾ full.
  • Steam the idlis for 8-10 minutes, or until cooked through and firm to the touch.

Make the Tempering

  • While the idlis are steaming, heat the butter in a small pan over medium heat. Add the black mustard seeds and carom seeds; allow them to splutter.
  • Stir in the white sesame seeds and cook for another 30 seconds until fragrant.

Serve

  • Once the idlis are cooked, carefully remove them from the steamer. Pour the tempering over the warm idlis.
  • Serve immediately with your favorite chutney or sambar.
