Vegetables

  • 500 gm Okra also known as bhindi. wash, and slit lengthwise., dry
  • 1 medium Onion finely chopped

  • Wash, dry, and slit each okra pod lengthwise.

Sauté the Onions and Okra

  • Heat mustard oil in a pan over medium heat. Add the chopped onions and sauté until translucent.
  • Add the okra and stir in the turmeric powder, red chili powder, and salt.

Cook the Okra

  • Cook for 10-15 minutes, stirring frequently, until the okra is tender.

Add Tamarind and Jaggery

  • Stir in the tamarind pulp and jaggery. Cook for another 2-3 minutes, allowing the flavors to meld.
