- 50 gm Jaggery also known as gudh
- 1 tsp Salt
- 1/2 tsp Turmeric Powder
- 1/2 - 1 tsp Chili Powder adjust to taste, red

- 2 tsp Mustard Oil

- Wash, dry, and slit each okra pod lengthwise.
Sauté the Onions and Okra
- Heat mustard oil in a pan over medium heat. Add the chopped onions and sauté until translucent.
- Add the okra and stir in the turmeric powder, red chili powder, and salt.
Cook the Okra
- Cook for 10-15 minutes, stirring frequently, until the okra is tender.
Add Tamarind and Jaggery
- Stir in the tamarind pulp and jaggery. Cook for another 2-3 minutes, allowing the flavors to meld.
