  • Add the water, coriander powder, red chili powder, turmeric powder, sugar, and salt. Stir well to combine.
  • Bring the mixture to a simmer and cook for 2 to 3 minutes, stirring occasionally, until the mango is tender and the flavors have melded. Adding a touch of water helps create a light sauce and prevents the spices from burning.
  • Remove the pan from the heat and stir in the garam masala. This preserves the delicate aroma of the garam masala.
  • Allow the launji to cool completely. This allows the flavors to deepen and mature.
