For the Sugar Syrup

For the Popsicles

  • 3 Kiwi peeled and chopped
  • 1 tbsp Lemon Juice freshly squeezed
  • 1 Kiwi sliced for garnish

Prepare the Sugar Syrup

  • Combine sugar and water in a small saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Reduce heat to low, add the saffron (with its soaking water), and simmer for 5 minutes. Remove from heat and let cool completely.

Prepare the Kiwi Mixture

  • Peel and chop the kiwis. Blend the chopped kiwis in a food processor or blender until smooth.

Combine and Freeze

  • In a bowl, gently combine the cooled sugar syrup, kiwi puree, and lemon juice. Stir well to ensure everything is thoroughly mixed.

Assemble the Popsicles

  • Fill popsicle molds about halfway with the kiwi mixture. Add a few slices of kiwi to each mold for garnish. Top off with the remaining kiwi mixture, leaving a little space at the top. Insert popsicle sticks and freeze for at least 5-6 hours, or until solid.

Serve and Enjoy
