Ingredients
For the Sugar Syrup
- 1/2 cup Sugar
- 1/2 cup Water
- 5 strands Saffron Strands soaked in 1 tablespoon warm water for 10 minutes
For the Popsicles
- 3 Kiwi peeled and chopped
- 1 tbsp Lemon Juice freshly squeezed
- 1 Kiwi sliced for garnish
Instructions
Prepare the Sugar Syrup
- Combine sugar and water in a small saucepan. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Reduce heat to low, add the saffron (with its soaking water), and simmer for 5 minutes. Remove from heat and let cool completely.
Prepare the Kiwi Mixture
- Peel and chop the kiwis. Blend the chopped kiwis in a food processor or blender until smooth.
Combine and Freeze
- In a bowl, gently combine the cooled sugar syrup, kiwi puree, and lemon juice. Stir well to ensure everything is thoroughly mixed.
Assemble the Popsicles
- Fill popsicle molds about halfway with the kiwi mixture. Add a few slices of kiwi to each mold for garnish. Top off with the remaining kiwi mixture, leaving a little space at the top. Insert popsicle sticks and freeze for at least 5-6 hours, or until solid.
