Kerala style appam dosa served with coconut curry & seared pan fried prawns is the best combo to devour .. south indian favourite as well as mine too !!

Ingredients
  

  • 2 cup basmati rice
  • 1 cup parboiled rice
  • Handful of poha
  • 1 cup thick coconut milk
  • 1 tbsp Sugar
  • Salt
  • Water as required for grinding
  • Oil as required

Instructions
 

  • rinse both the rice together & soak in water for 4 to 5 hours. Drain & add in a grinder. Add the poha, coconut milk, sugar, salt . add required amount of water and grind to a smooth for flowing batter.
  • pour the batter in a large bowl or pan. cover & let it ferment for 8-9 hrs . Batter will rise next day.
  • Heat a dosa pan . Drizzle oil & add a spoonful of batter. Spread it evenly & cover the pan for few seconds. the base will become nicely light golden.make all appams this way.
  • Serve hot with coconut curry & pan seared prawns .
