Ingredients
Mutton and Marinade
- 500 gm Mutton bone-in or boneless, cut into 1-inch cubes
- 1 Large Onion finely chopped
- 1/2 cup Coriander dhania
- 1/4 cup Mint Leaves fresh
- 2 Chilies adjust to taste, finely chopped, green
- 2 tbsp Ginger-Garlic Paste
- 2 tbsp Lemon Juice
- 1.5 tsp Salt or to taste
Spices
- 1 tsp Garam Masala
- 1 tsp Coriander Powder dhania powder
- 1/2 tsp Turmeric Powder haldi
- 1 tsp Pepper black, freshly ground, or more to taste
- 1 tsp Mustard Seeds rai, black
- 1 tsp Fennel Seeds saunf
- 8 Curry Leaves
Other
- 1/2 cup Cooking Oil vegetable or coconut oil
- 1 cup Water
Instructions
Prepare the Marinade
- Blend coriander leaves, mint leaves, green chilies, lemon juice, salt, and ginger-garlic paste into a smooth paste.
- Marinate the mutton cubes with this paste. Refrigerate for at least 2-3 hours, or preferably overnight.
Cook the Mutton Pepper Fry
- Heat oil in a heavy-bottomed pan or pot over medium heat.
- Add black mustard seeds and fennel seeds. Let them splutter.
- Add finely chopped ginger and garlic. Sauté for about a minute until fragrant.
- Add the chopped onions and sauté for 2-3 minutes until softened and lightly golden.
- Add coriander powder, turmeric powder, garam masala, freshly ground black pepper, and curry leaves. Sauté for another 2-3 minutes, stirring constantly.
- Add the marinated mutton and stir well to coat with the spice mixture.
- Add 1 cup of water, bring to a simmer, then reduce heat to low, cover, and cook for approximately 20 minutes, or until the mutton is tender and the sauce has thickened, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot with steamed rice or parottas.
