Ingredients
- 1 kg Mutton
- 2 Cup Onion sliced
- 1 tbsp Ginger Paste garlic 1 tbsp+1tsp
- tsp Salt
- 1 tbsp Chili Powder red
- 2 tbsp Coriander dhania
- 2 tsp Turmeric Powder haldi
- 1 tsp Kashmiri Chili Powder red
- 1 tbsp Onion Paste
- 1 tsp Cumin Seed jeera
- 1 Mace
- 1 stick Cinnamon
- 6 clove Cloves
- 4 Pepper back paper, black
- 2 Cardamom black
- 4 Cardamom elaichi
- 1 tsp Cardamom Powder elaichi
- 1 Star Anise
- 1 cup Tomato chopped
- 2 tbsp Oil
- 1 tbsp Ghee ghee
- leaves Garnishing or coriander coriander for
Instructions
Prepare the Mutton
- Wash the mutton thoroughly and boil in water for 5 minutes. Drain the water, rinse again, and set aside.
Marinate the Mutton
- Marinate the mutton with 1 teaspoon salt, 1 tablespoon Kashmiri chili powder, 1 tablespoon ginger paste, and 1 tablespoon garlic paste. Let it sit for at least 30 minutes (or longer for deeper flavor).
Sauté Aromatics
- Heat 2 tablespoons of oil (plus ghee, if using) in a large pot or Dutch oven. Add the cumin seeds, cinnamon stick, mace, cloves, star anise, black peppercorns, green cardamom pods, and black cardamom pods. Sauté until fragrant (about 30 seconds).
- Add the sliced onions and sauté until golden brown.
Cook the Curry
- Add the chopped onions, ginger-garlic paste, and sauté until golden brown. Stir in the turmeric powder, coriander powder, red chili powder, and salt. Add the chopped tomatoes and cook for 5 minutes.
- Stir in the cardamom powder. Add the marinated mutton and cook uncovered for 5 minutes, stirring frequently.
Simmer and Serve
- Add 1 cup of water, cover, and simmer until the mutton is tender (about 20 minutes). Adjust the heat as needed to maintain a gentle simmer. Garnish with fresh coriander leaves.
- Serve hot with rice, naan, or roti.
