Ingredients
For the Spice Roast
- 2 tbsp Peppercorns
- 1 tbsp Fennel Seeds saunf
For the Sauté
- 1 cup Coconut fresh, grated
- 1 Onion large, thinly sliced
- 3 Chili green, slit
- 1 sprig Curry Leaves
- 2 tsp Ginger-Garlic Paste
- 1 Tomato finely chopped
Spices
- 1 tsp Turmeric Powder haldi
- 2 tsp Garam Masala
- 1 tsp Meat Masala optional
- 1 tbsp Coriander chopped, fresh
Cooking Oil
- 2 tbsp Coconut Oil
Instructions
Prepare the Coconut and Spices
- Dry roast the grated coconut until golden brown. Set aside.
- Dry roast the peppercorns and fennel seeds for 2 minutes until fragrant. Coarsely grind them using a mortar and pestle or spice grinder. Set aside.
Pressure Cook the Mutton
- In a pressure cooker, combine the mutton, salt, and 1 cup of water. Pressure cook for 10 minutes. Allow the pressure to release naturally.
Sauté Aromatics
- Heat coconut oil in a pan. Add the sliced onions, curry leaves, and green chilies. Sauté until the onions soften.
- Add the ginger-garlic paste and sauté for 1 minute. Add the chopped tomatoes and cook until they become mushy.
Combine and Simmer
- Add the cooked mutton (with any remaining cooking liquid) to the pan. Cook on medium heat for 5-10 minutes.
- Stir in the garam masala and meat masala (if using). Continue to cook and roast for another 5 minutes, stirring frequently.
Finish the Dish
- Add the ground peppercorn and fennel seed mixture. Mix well and roast for another 5 minutes on medium heat, allowing the water to evaporate completely.
- Stir in the chopped coriander and roasted coconut. Give a final stir and remove from heat.
- Serve hot.
