  • 300 gm Mushrooms button, cremini, or mixed varieties
  • 1 Onion finely chopped, medium-sized
  • 1/2 Tomato finely chopped, medium-sized

Prepare the Spice Blend

  • Dry roast the red chilies, peppercorns, fennel seeds, cumin seeds, and coriander seeds in a dry pan until fragrant. Allow to cool completely, then grind into a fine powder.

Sauté Aromatics

  • Heat 1 tablespoon of oil in a pan or kadai. Add half of the curry leaves, onions, and ginger-garlic paste. Sauté until the onions become translucent.

Add Tomatoes and Mushrooms

  • Add the chopped tomatoes and sauté until they soften. Then, add the sliced mushrooms, chili powder, salt, and garam masala. Sauté for a few minutes until the mushrooms release their liquid and slightly brown.

Incorporate Spice Blend

  • Stir in the ground spice blend and remaining curry leaves. Cook for another minute or two, until fragrant and well combined.

Serve

  • Serve hot with steamed rice, curd rice, roti, or naan.
