Ingredients
Peanut Sauce
- 50 gm Peanuts roasted
- 1 tbsp Sesame Seeds roasted
- 1 Onion finely chopped
- 5 clove Garlic crushed
- 1 tbsp Ginger crushed
- 1 tsp Coriander Seeds
- 1/2 tsp Cumin Seeds
- 7 Peppercorns
- 1/2 tsp Sugar brown
- 1 tbsp Soy Sauce
- 1 tbsp Honey
- 4 tbsp Coconut Milk
- 1 tbsp Lemon Juice
- 1/2 tsp Salt or to taste
- 1/2 cup Water
- Oil as needed
Paneer Marinade
- 400 gm Cottage Cheese cut into long fingers
- 1 tbsp Ginger-Garlic Paste
- 1 tbsp Soy Sauce
- 1 tsp Lemon Juice
- 2 tsp Sugar brown
- 2 tsp Honey
- 1/2 tsp Chili Powder
- 1/2 tsp Coriander ground
- 1 1/2 tsp Salt or to taste
Instructions
- Coarsely crush the roasted peanuts and sesame seeds. Set aside. This adds a wonderful textural element to the sauce.
- In a pan, heat the oil. Add the chopped onion and sauté until translucent and softened, about 5-7 minutes. Add the crushed garlic and ginger, and sauté until fragrant, about 1 minute.
- Add the crushed peanuts and sesame seeds to the pan. Stir well to combine.
- Reduce the heat to low. Add the coriander seeds, cumin seeds, peppercorns, brown sugar, soy sauce, honey, salt, and coconut milk. Mix well.
- Add the water to the pan. Simmer the sauce, stirring occasionally, until it thickens and develops a glossy sheen, about 10-15 minutes. This allows the flavors to meld beautifully.
- Remove the sauce from the heat. Stir in the lemon juice. Taste and adjust seasonings as needed. Set aside to cool.
- Cut the paneer into long fingers. In a bowl, combine the paneer with all the marinade ingredients. Gently toss to coat. Cover and refrigerate for at least 30 minutes. This allows the paneer to absorb the flavors of the marinade.
- Heat a grill pan over medium heat. Lightly brush with oil. Reduce heat to low. Grill the marinated paneer fingers on all sides until lightly charred, about 2-3 minutes per side. Basting with the remaining marinade while grilling adds extra flavor.
- If the peanut sauce has been refrigerated, gently warm it up. Thread the grilled paneer onto toothpicks. Generously coat each paneer satay with the peanut sauce.
