Ingredients
Blondies
- 145 gm All-Purpose Flour
- 0.5 tsp Baking Powder
- 1 pinch Salt
- 120 gm Butter unsalted
- 85 gm Sugar brown, light
- 85 gm Sugar granulated
- 1 large Egg approximately 57g with shell, at room temperature
- 160 gm Smooth Peanut Butter
- 1 tsp Vanilla Extract
- 0.25 cup Peanuts crushed
Peanut Sauce
- 0.5 cup Milk
- 2 tbsp Sugar granulated
- 0.5 cup Smooth Peanut Butter
Instructions
- Preheat oven to 325°F (160°C). Grease and flour a baking pan. This ensures the blondies won't stick.
- In a medium saucepan, melt the unsalted butter over low heat. Remove from heat and let cool completely. Cooling the butter prevents it from scrambling the egg in the next step.
- In a mixing bowl, whisk together the cooled melted butter, light brown sugar, granulated sugar, egg, peanut butter, and vanilla extract until light and fluffy. Whisking incorporates air for a tender crumb.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Whisking dry ingredients together ensures even distribution.
- Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, which can lead to tough blondies.
- Fold in most of the crushed peanuts, reserving some for topping.
- Pour the batter into the prepared pan and sprinkle the reserved crushed peanuts on top.
- Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached. Don't overbake, as this will result in dry blondies.
- Let the blondies cool completely in the pan before making the peanut sauce. Cooling allows the blondies to set properly.
- In a small saucepan, combine the milk and granulated sugar. Bring to a simmer over medium heat, stirring constantly until the sugar dissolves.
- Remove from heat and whisk in the peanut butter until smooth and thick. This creates a luscious, creamy peanut sauce.
- Once the blondies are completely cool, pour the peanut sauce over them and spread evenly. Cut into squares and serve.
