Ingredients
Paneer
- 100 gm Cottage Cheese indian cottage cheese, finely chopped
Vegetables
- 1 Chili finely chopped, green
- 1 Bell Peppers finely chopped, yellow
- 1 Bell Peppers finely chopped, red
- 1 Bell Peppers finely chopped, green
Filling
- 1/4 tsp Chili Powder red
- 1 tsp Olive Oil
- 2 tbsp Tomato Ketchup
- 1/2 tsp Oregano dried
- 1/4 tsp Salt or to taste
Topping
- 1/4 cup Cheese grated
- 1/4 tsp Chili Flakes red
- 1/4 tsp Chaat Masala
- 1 tbsp Lemon Juice to taste
Garnish
- 1/2 cup Bell Peppers slices, as needed, for garnish, green, yellow
- 1 Tomato as needed, for garnish
Instructions
- Cut the paneer into 2-inch discs. Scoop out a small amount from the center of each disc to create a well for the filling. Crumble the scooped-out paneer and set aside.
- Heat the olive oil in a non-stick pan. Sauté the green chilies for 30 seconds until fragrant. Add the chopped bell peppers and sauté until slightly softened.
- Add the crumbled paneer, tomato ketchup, salt, oregano, and red chili powder to the pan. Mix well and cook for a minute. This is your filling. Remove from heat and set aside.
- Heat a griddle pan over medium heat. Place the paneer discs on the hot pan and grill for 4-5 minutes per side, or until grill marks appear and the paneer is lightly browned. Grilling adds a delicious smoky flavor.
- Fill the grilled paneer discs with the prepared filling. Top with grated cheese, red chili flakes, chaat masala, and a squeeze of lemon juice. The lemon juice brightens the flavors.
- Garnish with yellow and green bell pepper slices and a tomato flower for an elegant presentation. Serve warm and enjoy!
Recipe Notes
Good To Know
- For extra flavor and a more Italian touch, rub the bread slices lightly with a cut garlic clove and brush with olive oil before grilling to achieve a fragrant, crispy base for your canapés.
- If preparing these canapés ahead for a party, grill the bread and prepare the paneer topping separately, then assemble and briefly reheat under a broiler just before serving to maintain freshness and texture.
- Add a layer of tangy tomato chutney or a thin slice of sun-dried tomato beneath the paneer mixture for a burst of umami and color, enhancing the Italian profile while balancing the spicy and tangy notes.
- For a vegan version, substitute paneer and cheese with firm tofu and vegan mozzarella, and increase the seasoning slightly to complement the milder tofu flavor.
- You can add grated cheese and black pepper powder on top.
Expert Tips
- For a smokier flavor, try grilling the paneer briefly before adding it to the canapés. This adds a delicious char and enhances the overall taste.
- Experiment with different herbs and spices in the paneer mixture. Fresh basil, oregano, or a pinch of red pepper flakes can elevate the flavor profile.
- If using wooden skewers for serving, soak them in water for at least 30 minutes before grilling to prevent burning.
Storage Instructions
- These canapés are best enjoyed fresh. However, leftover assembled canapés can be stored in an airtight container in the refrigerator for up to 1 day. Reheat gently in a toaster oven or under a broiler before serving.
