Instructions

  • In a dry pan, roast the dried red chilies and coriander seeds until fragrant. This enhances their flavor and creates a deeper, more complex spice profile.
  • Pat the curry leaves dry with a clean cloth or paper towel. Heat 1 tsp of oil in the same pan. Add the dried curry leaves and roast until crispy and fragrant. Remove from heat.
  • In a grinder or food processor, combine the roasted red chilies, coriander seeds, roasted peanuts, and crispy curry leaves. Process until a fine masala is formed. Set aside.
  • Cut the paneer into bite-sized cubes. Heat the remaining 1 tsp of oil in a pan. Add the sesame seeds and let them crackle. This adds a nutty aroma and pleasant texture to the dish.
  • Add the black pepper, chaat masala, and salt to the pan. Stir to combine.
  • Add the prepared peanut masala to the pan and mix well. Add the paneer cubes and gently toss until they are evenly coated with the spice mixture. Cook until heated through.
  • For an elegant presentation, insert toothpicks into each paneer cube. Serve hot with your favorite chutney.

Recipe Notes

Good To Know

  • For extra crunch, toss the paneer cubes in a light dusting of cornstarch or rice flour before pan-frying.
  • To intensify the smoky flavor, briefly dry-roast the coriander seeds and red chillies before grinding them for the masala.
  • For a vegan version, substitute paneer with firm tofu and use oil instead of ghee or butter. Press the tofu well to remove excess moisture for optimal texture.
  • Serve on a platter lined with banana leaves and garnish with finely chopped fresh coriander and a squeeze of lime.

Expert Tips

  • Adjust the amount of red chillies to control the spice level according to your preference.
  • For a richer flavor, use freshly roasted and ground spices instead of pre-ground ones.
  • Don't overcrowd the pan when frying the paneer; work in batches to ensure even browning.

Storage Instructions

  • Store leftover paneer masala in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a pan on the stovetop or in the microwave, adding a splash of water or oil to prevent sticking.
