Ingredients
For the Green Pea Masala
- 2 cup Peas dry, green
- 1 Onion chopped
- 2 Tbsp Oil
- 1/4 cup Or Coconut fresh, frozen, grated
- 1 inch Ginger
- 3 clove Garlic
- 2 Tbsp Mint Leaves
- 4 Tbsp Coriander dhania
- 1/2 tsp Cumin Seeds jeera
- 1 Tbsp Coriander Seeds
- 1 Star Anise
- 2 buds Marathi Moggu/Kapok Buds
- 3 clove Cloves
- 1 inch Cinnamon
- 7 Kashmiri Chili or byadgi chili
- 2 Chilies green, or jalapeños
- 1 tsp Chaat Masala or amchur powder
- 1 1/2 tsp Salt or to taste
- Water as needed
For the Green Chutney
- 1 cup Coriander dhania
- 1/2 cup Mint Leaves
- 3 Chilies green, or jalapeños
- 2 clove Garlic
- 2 Tbsp Coconut grated, optional
- 1 1/2 tsp Salt or to taste
- 1 tsp Lemon Juice
For the Sweet Tamarind Chutney
- 1 cup Tamarind seeds removed
- 11 Dates pitted
- 1/2 cup Jaggery or 3/4 c sugar
- 1 tsp Cumin Seeds jeera, roasted
- 1/2 tsp Salt black, or to taste
For Assembling the Chaat
- Pani Puris or crisp papdis
- Chickpea Noodle crispy chickpea noodles
- Onion chopped, finely, red
- Tomatoes chopped, finely, optional
- Pomegranate Seeds optional
- Coriander dhania, chopped, finely, optional
Instructions
- Combine the coriander, mint leaves, garlic, green chilies, grated coconut (if using), and salt in a blender. Blend until smooth, adding a little water if needed to achieve a thick paste. Transfer to a bowl, stir in lemon juice, and refrigerate.
- In a saucepan, combine the tamarind, dates, and 2 cups of water. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool slightly, then strain the mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract as much pulp as possible. Discard the solids. Return the strained liquid to the saucepan, add the jaggery (or sugar), and bring to a boil. Simmer for 15-20 minutes, or until slightly thickened. Stir in the roasted cumin seeds and black salt. Remove from heat and let cool.
- Wash and soak the dry green peas in water for at least 8 hours, or overnight. Drain the peas and pressure cook them with salt and enough water to cover until soft and tender. Set aside.
- In a blender or food processor, combine the coconut, ginger, garlic, mint leaves, coriander leaves, cumin seeds, coriander seeds, star anise, Marathi moggu (kapok buds), cloves, cinnamon, Kashmiri chilies, and green chilies. Blend into a smooth paste. Set aside.
- Heat the oil in a large saucepan over medium-high heat. Add the chopped onion and sauté until softened and translucent. This builds the flavor base of the masala. Add the prepared masala paste and cook for a few minutes, stirring constantly, until fragrant and the paste is almost dry. This step toasts the spices and deepens their flavor.
- Add the cooked green peas to the saucepan, along with enough water to create a medium-thick gravy. Stir in the chaat masala (or amchur powder) and salt. Bring the mixture to a boil, then reduce heat and simmer for 8-10 minutes, or until the gravy thickens to your desired consistency. Taste and adjust seasonings as needed.
- Crush the pani puris (or papdis) into bite-sized pieces and arrange them on a serving plate. Pour the hot green pea masala over the crushed puri, ensuring they are evenly coated. Drizzle generously with the sweet tamarind chutney and green chutney.
- Sprinkle the chaat with finely chopped red onion, tomatoes (if using), pomegranate seeds (if using), and coriander leaves. Top with a generous amount of sev. Serve immediately while hot, for the best chatpata experience. Enjoy with a cup of chai or coffee.
