Make the Katori Shells

  • Combine cold butter and flour using a pastry blender or pulse in a food processor until the mixture resembles coarse crumbs. Add cold water and pulse until a dough forms. Knead briefly, wrap in plastic wrap, and chill for 15 minutes.
  • Roll out the dough thinly. Cut into circles large enough to line muffin tin cups. Press into the cups. Line with parchment paper and fill with baking beans or rice. Bake at 350°F (175°C) for 30 minutes, or until lightly golden. Remove beans/rice and let cool.

Make the Green Pea Curry

  • Heat oil in a pan. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for 1 minute. Add cumin seeds, chili powder, turmeric powder, garam masala, and salt. Sauté briefly.
  • Add boiled green peas and a little water. Simmer until heated through. Sprinkle garam masala.

Make the Tamarind Chutney

  • Combine tamarind pulp, sugar, salt, and roasted cumin seeds in a saucepan. Simmer until thickened and desired consistency is reached.

Make the Green Chutney

  • Combine coriander leaves, mint leaves, tamarind paste, garlic cloves, green chili, sugar, and salt in a blender. Blend until smooth, adding a little water if needed.

Make the Curd Mixture

  • Whisk together yogurt, sugar, and salt until smooth.

Assemble the Chaat

  • Fill each cooled katori shell with mashed potatoes. Top with green pea curry, curd mixture, tamarind chutney, and green chutney. Garnish with chopped onions, coriander leaves, and chaat masala.
