Prepare the Green Peas Masala

  • Pressure cook the soaked green peas with a little water for 3-4 whistles or until tender. Set aside.
  • Heat oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until translucent.
  • Add the chopped tomatoes and cook until softened. Stir in the diced potatoes and cook for 2-3 minutes.
  • Add the coriander powder, chili powder, cumin powder, and garam masala. Cook for another 2-3 minutes, stirring frequently.
  • In a blender, puree 1/4 cup of the cooked green peas with a little water to create a smooth paste.
  • Add the remaining cooked green peas and the green pea puree to the pan. Stir well and bring to a simmer. Cook for 5-7 minutes, allowing the flavors to meld.

Assemble and Garnish the Chaat

  • In a serving bowl, add the green peas masala. Top with green chutney and tamarind chutney.
  • Garnish generously with finely chopped red onions, tomatoes, and coriander leaves.
  • Finish with a generous sprinkle of sev.
  • Serve immediately and enjoy!
