  • Add the ginger-garlic paste and green chilies. Sauté for about 1 minute until fragrant.
  • Add the chopped onion and sauté until translucent, about 5-7 minutes. This builds a flavor base for the masala.
  • Add the chopped tomatoes and salt. Cook until the tomatoes soften and break down, forming a thick paste, about 5-7 minutes.
  • Stir in the pav bhaji masala and cook for 1 minute to bloom the spices. Then, add the green peas and sauté for another minute.
  • Add the mashed potatoes to the pan. Mix well and cook for 3-4 minutes, mashing the potatoes slightly to incorporate them into the masala. This creates a cohesive filling.
  • Stir in the chopped cilantro, 1 tablespoon of green chutney, and tamarind chutney. Mix thoroughly to combine all the flavors.
  • Remove the pan from the heat and stir in the lemon juice. This brightens the flavors of the masala.
  • To prepare the pav buns, slice each bun in half horizontally. Spread butter on the cut sides of each half.
  • Toast the buttered pav buns in a pan over medium heat until golden brown and slightly crispy. This adds a delightful texture.
  • Spread green chutney on one half of each pav bun. Top with a generous spoonful of the potato masala.
  • Drizzle tamarind chutney over the masala and sprinkle with chopped onions.
