Ingredients
For the Raw Banana
- 250 gm Bananas peeled and cut into 1-inch thick slices, raw
For the Green Paste
- 50 gm Spinach
- 50 gm Mustard Greens
- 20 gm Coriander cilantro
- 20 gm Mint Leaves
- 20 gm Bathua also known as indian spinach; optional
- 20 gm Leaf Lettuce or other red leaf greens, red
For the Curry
- 2 tbsp Onion Paste
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 2 tsp Chili Paste adjust to taste, green
- 1 tsp Cumin Powder
- 1 tbsp Cream fresh
- 1 tbsp Yogurt plain
- 1 tbsp Oil vegetable or coconut
- 1.5 tsp Salt or to taste
- 1/2 cup Water
Instructions
Prepare the Raw Bananas
- Boil the raw banana slices until tender but not mushy. Set aside.
Make the Green Paste
- Blend the spinach, mustard greens, coriander, mint, bathua (if using), and red leaf lettuce into a smooth paste.
Sauté Aromatics
- Heat oil in a pan. Add onion paste, ginger paste, and garlic paste. Sauté until fragrant, about 2 minutes.
Cook the Curry
- Add green chili paste and cumin powder. Stir well and cook for another minute.
- Stir in the green paste and cook for 2-3 minutes until slightly softened.
- Add the boiled banana slices, salt, and yogurt. Mix well.
- Pour in 1/2 cup of water, cover the pan, and simmer for 5 minutes, or until the sauce has thickened slightly.
Finish and Serve
- Stir in the fresh cream. Serve hot with steamed rice, chapati, or paratha.
