For the Raw Banana

  • 250 gm Bananas peeled and cut into 1-inch thick slices, raw

Prepare the Raw Bananas

  • Boil the raw banana slices until tender but not mushy. Set aside.

Make the Green Paste

  • Blend the spinach, mustard greens, coriander, mint, bathua (if using), and red leaf lettuce into a smooth paste.

Sauté Aromatics

  • Heat oil in a pan. Add onion paste, ginger paste, and garlic paste. Sauté until fragrant, about 2 minutes.

Cook the Curry

  • Add green chili paste and cumin powder. Stir well and cook for another minute.
  • Stir in the green paste and cook for 2-3 minutes until slightly softened.
  • Add the boiled banana slices, salt, and yogurt. Mix well.
  • Pour in 1/2 cup of water, cover the pan, and simmer for 5 minutes, or until the sauce has thickened slightly.

Finish and Serve

  • Stir in the fresh cream. Serve hot with steamed rice, chapati, or paratha.
