Ingredients
For the Poriyal
- 3 cup Moringa Leaves also known as drumstick leaves or murungai keerai; thoroughly washed and cleaned
- 1/4 cup Water
- 3 tbsp Coconut freshly grated
- 1.5 tsp Salt or to taste
For the Tempering
- 1 tbsp Oil coconut oil recommended
- 1/2 tsp Mustard Seeds
- 1 tsp Gram also known as urad dal, black, split
- 1 tbsp Chickpea split chickpeas; split chickpea
- 2 Chili Pepper adjust to your spice preference, red
Instructions
Preparation
- Wash and thoroughly clean the drumstick leaves. You can also add drumstick flowers if desired.
Tempering
- Heat oil in a wok or pan. Add mustard seeds and allow them to splutter. Then, add the split black gram (urad dal) and chana dal. Sauté until lightly golden.
Cooking the Leaves
- Add the red chilies and sauté for a few seconds. Add water and salt, bring to a boil. Add the cleaned drumstick leaves, cover the pan with a lid or plate.
Finishing
- Reduce heat to low and cook for 5-8 minutes, or until the leaves are wilted and the water is absorbed. Stir in the shredded coconut, mix well, and remove from heat.
