Preparing the Raw Bananas

  • Heat 5 tablespoons of oil in a large wok or pan over medium heat. Once hot, add the cumin seeds and asafoetida. Sauté for about 30 seconds, or until the cumin seeds begin to splutter.

Cooking the Bananas

  • Add the sliced raw bananas to the wok and stir well to coat them in the oil and spices. Cover the pan and cook for 10-12 minutes over low heat, stirring occasionally, until the bananas are tender.

Adding Spices and Simmering

  • Add the red chili powder, coriander powder, turmeric powder, garam masala, and salt. Mix well to combine. Sprinkle in 2 tablespoons of water, cover the pan, and cook for another 5 minutes, or until the flavors meld and the sauce slightly thickens.

Finishing and Serving

  • Reduce the heat to low. Stir in the dried mango powder and chopped fresh coriander. Mix gently. Remove from the heat and serve hot with roti, rice, or naan.
