Ingredients
For the Kofta
- 1 cup Banana mashed, raw
- 1/2 cup Gram Flour also known as besan; roasted for a richer flavor
- 1 tbsp Chili finely chopped, green
- 1 tbsp Cumin ground
- 1 tbsp Coriander chopped, fresh
- 2 tbsp Soy Granules
- 1.5 tsp Salt or to taste
- Oil for frying the koftas
For the Curry
- 2 tbsp Clarified Butter ghee
- 2 leaves Bay Leaves
- 2 tbsp Yogurt also known as curd, plain
- 1 tsp Turmeric haldi
- 1 tsp Chili Powder red
- 1 tsp Cumin jeera powder
- 1 tsp Coriander dhania powder
- 1 tsp Ginger Paste
- 1/4 tsp Asafoetida hing
- 1/2 cup Water
- 1 tsp Garam Masala adds extra warmth, optional
- Coriander chopped, dhania, for garnish
- Cream for garnish (optional), fresh cream
Instructions
Prepare the Kofta
- Combine mashed raw banana, gram flour, chopped green chili, ground cumin seeds, chopped coriander, soya granules, and salt in a bowl. Mix well and form small, round koftas.
- Fry the koftas in oil until golden brown and set aside.
Make the Curry
- Heat ghee in a pan or wok. Add bay leaves and sauté briefly.
- In a separate bowl, whisk together yogurt, turmeric powder, red chili powder, cumin powder, coriander powder, ginger paste, and asafoetida. Add a little water to thin the mixture.
- Pour the yogurt mixture into the pan and cook, stirring continuously, until the aroma of spices fills the kitchen.
- Add water to create a curry base. Then, add salt and garam masala (if using). Simmer for a minute.
- Gently add the fried koftas to the curry. Cover and simmer for another minute to allow the flavors to meld.
Serve
- Garnish with fresh coriander leaves and a dollop of fresh cream (optional). Serve hot with rice, roti, or naan.
