For the Milk Cake

  • 1 ltr Milk whole milk recommended for best results
  • 1/2 cup Sugar adjust to your preferred sweetness. granulated sugar works best.
  • 1/4 cup Yogurt plain yogurt or curd
  • 3 tbsp Ghee ghee
  • 1/8 tsp Alum Powder use sparingly. helps with texture and setting. can be omitted if desired, but may affect final texture.
  • 1 tbsp Milk for stopping the cooking process.

Get Started

  • Boil 1 liter of whole milk in a heavy-bottomed pan over medium-high heat, stirring frequently to prevent sticking or burning.

Add the Sweet and Tangy

  • Once the milk comes to a boil, reduce the heat to medium. Add 1/2 cup sugar, 1/4 cup yogurt, and 1/8 teaspoon alum powder. Stir well to combine.

Thicken the Mixture

  • Continue cooking, stirring frequently, until the mixture thickens to a rabdi-like consistency (thickened milk). This will take approximately 20-30 minutes. Reduce heat as needed to prevent burning.

Caramelize for Flavor

  • Lower the heat to low. Continue to cook and stir, allowing the mixture to caramelize and turn a light brown color. This will take approximately 10-15 minutes.

Stop the Cooking

  • Once the mixture is a light brown color and pulls away from the sides of the pan, remove from the heat. Immediately stir in 1 tablespoon of milk to halt the cooking process. This ensures a soft texture.

Set and Serve

  • Pour the mixture into a lightly greased 8x8 inch baking pan or similar sized container. Let it cool and set completely at room temperature for at least 30 minutes, or until firm.

Garnish and Enjoy
