- 1 ltr Milk
- 2/3 cup Cottage Cheese chaina - homemade. fresh, crumbed
- 1/2 cup Sugar you can add/less as per your taste
- 1/2 tsp Cardamom Powder
- 1 tbsp Pistachios sliced

- Take a heavy-bottomed pan and add the milk. Stir continuously over low heat until the volume is reduced by half. This process takes time and patience; reduce the heat if the milk starts to burn.
Incorporating the Paneer
- Add the crumbled paneer to the reduced milk. Stir continuously until the mixture thickens and resembles khoya (a type of Indian milk solids). It will become quite dense.
Sweetening and Flavoring
- Add the sugar and cardamom powder. Stir well to combine. Continue cooking, stirring frequently, until the mixture begins to leave the sides of the pan and thickens considerably. This indicates it's ready.
Setting the Kalakand
