Ingredients
For the Sugar Syrup
- 2 cup Sugar granulated
- 1 cup Water
- 1/4 tsp Cardamom Powder
- 1-2 strands Saffron Strands optional
For the Rabdi
- 1 ltr Milk whole milk preferred
- 1/2 cup Sugar
- 1/2 tsp Cardamom Powder
- 1 cup Mawa also known as mawa, grated
- 2 tbsp Pistachios chopped
- 2 tbsp Almonds chopped
For the Ghevar Batter
- 1 cup All-Purpose Flour also known as maida
- 1/4 cup Milk cold
- 2 cup Water ice cold
- 1 tbsp Ghee clarified butter, for batter
- 1/2 tsp Lime Juice
- Ghee as needed, clarified butter, for deep frying
For Garnishing
- 2 tbsp Nuts mixed, sliced almonds and pistachios
- 5-6 strands Saffron Strands optional
Instructions
Prepare the Sugar Syrup
- Heat sugar, water, cardamom powder, and saffron strands in a pan until a one-thread consistency syrup forms.
Make the Rabdi
- In a heavy-bottomed pan, bring milk to a simmer over low heat, stirring frequently until reduced by half.
- Add sugar, cardamom powder, and grated khoya. Stir for 6-8 minutes until well combined.
- Stir in pistachios and almonds; cook for another 1-2 minutes.
Prepare the Ghevar Batter
- In a large bowl, whisk together melted ghee, 2 tablespoons ice-cold water, and 2 tablespoons cold milk until creamy.
- Gradually add the remaining cold milk and mix well.
- Slowly incorporate the all-purpose flour, mixing until a smooth, lump-free batter forms. Stir in lime juice.
Fry the Ghevar
- Heat desi ghee in a heavy-bottomed, round pan over high heat until it smokes.
- Pour 1 tablespoon of batter from a height of 6-8 inches into the center of the hot ghee.
- Wait 1-2 minutes for bubbles to subside, then add another tablespoon of batter. Repeat this process 3-4 times, adding more batter as needed for larger pans. Use a thin, metal rod to detach any batter sticking to the center.
- Fry until golden brown and crispy. Carefully remove the ghevar using the rod and place it on a round bowl to drain excess ghee.
Finish and Garnish
- Dip the fried ghevar in the hot sugar syrup, using the rod to submerge it completely. Again, place on a round bowl to remove excess syrup.
- Let the ghevar dry for about an hour.
- Spread a generous coat of rabdi on the dried ghevar. Sprinkle with mixed nuts and saffron strands for garnish.
