Ingredients
Jackfruit Preparation
- 1 medium Jackfruit also known as phanas or kathal. may already be peeled by vendor; otherwise, raw, see instructions.
Spice & Flavor Blend
- 1 cup Coconut grated
- 2-3 Chilies adjust to your spice preference., green
- 1 sprig Curry Leaves
- 1 tsp Mustard Seeds also known as rai.
- 1-2 Chilies adjust to your spice preference., dried, red
Cooking Essentials
- 1 tbsp Coconut Oil
- 1/2 tsp Turmeric Powder also known as haldi.
- 1.5 tsp Salt adjust to taste.
- 1 cup Water for cooking the jackfruit; adjust as needed.
Instructions
Preparing the Jackfruit
- Wash the jackfruit. If not already peeled, lightly oil your hands and use a sharp knife to slice the jackfruit (similar to a pineapple). Dab away any sticky sap and reapply oil to the jackfruit.
- Cut the jackfruit into medium-sized chunks. Do not discard tender seeds; they'll melt while cooking.
- Add the jackfruit chunks to a pressure cooker with 1 cup of water, salt, and turmeric powder. Pressure cook for 5-6 whistles (depending on your cooker).
Coconut-Chili Paste
- Once the jackfruit is cool, drain excess water and mash it gently with a fork or masher. Do not over-mash; maintain a shredded texture.
- Grind the grated coconut and green chilies in a blender until a smooth paste forms.
Stir-Frying the Thoran
- Heat coconut oil in a pan or kadhai. Once hot, add mustard seeds and allow them to crackle.
- Add the dried red chilies and curry leaves. Stir in the mashed jackfruit, adding more salt if needed.
- Add the coconut-chili paste, stirring well to combine. Cook until heated through, about 2-3 minutes.
Serving Suggestions
- Serve hot with rasam rice, sambar rice, or appalams (poppadums).
