Ingredients
Okra Preparation
- 250 gm Okra also known as ladies fingers; wash thoroughly and pat dry with a clean kitchen towel.
Spices and Aromatics
- 1 tsp Mustard Seeds rai
- 2 Chili finely chopped, green
- 1 tsp Chili Powder adjust to your spice preference, red
- 1.5 tsp Salt or to taste
Instructions
Preparing the Okra
- Wash the okra thoroughly. Do not cut the edges yet. Pat the okra dry using a clean kitchen towel.
- Cut off the stem ends of the okra and slice into thin rings. Set aside.
Stir-frying the Okra
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add the sliced okra and chopped green chilies. Sauté for 3-5 minutes, stirring occasionally.
Incorporating Yogurt and Spices
- Add the yogurt (curd) to the pan and mix well. Increase the heat to medium-high. Stir continuously for 5 minutes, until the moisture starts to reduce.
- Stir in salt and red chili powder. Continue to fry for another 5 minutes, stirring constantly, until the okra is tender and slightly dry.
- Remove from heat and serve hot.
