For the Okra

  • 250 gm Okra also known as ladies fingers; wash thoroughly and pat dry

Prepare the Okra

  • Wash the okra thoroughly. Pat them completely dry with a clean kitchen towel. Trim the stem ends and slice into 1/4-inch thick rounds.

Make the Tempering

  • Heat coconut oil in a pan over medium heat. Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown, stirring frequently to prevent burning.

Sauté Aromatics

  • Add the crushed garlic, curry leaves, sliced onions, and broken red chilies to the pan. Sauté until the onions soften and become translucent, about 5-7 minutes.

Cook the Okra

  • Add the sliced okra, salt, and lemon juice to the pan. Mix well to coat the okra with the spices and oil. Cover the pan and cook for 5 minutes, or until the okra loses its stickiness.

Add Spices and Finish

  • Remove the lid and stir in the chili powder, turmeric powder, and coriander powder. Continue to cook for another 5-10 minutes, or until the okra is tender and cooked through, stirring occasionally.

Incorporate Coconut and Peanuts

  • Stir in the grated coconut and roasted peanuts. Cook for another 3-5 minutes, stirring continuously, until heated through.

Garnish and Serve

  • Remove from heat. Garnish with fresh coriander leaves. Serve hot as a side dish with rice, roti, or naan.
