Mango Puree

  • 1/4 cup Virgin Olive Oil extra
  • 1.5 tbsp Chili finely chopped; adjust to your spice preference, green
  • 2 tbsp Coriander also known as coriander, finely chopped
  • 1 tbsp Chili finely chopped; for added color and heat, red
  • 1 tbsp Mint Leaves finely chopped, fresh
  • 1/4 tsp Pepper black, freshly ground

Prepare the Mango Puree

  • Blend together the chopped mango, lime juice, orange juice (or water), honey, cumin seeds, garlic, and salt until completely smooth. Transfer the puree to a jar with a tight-fitting lid.

Emulsify and Finish

  • Add the olive oil to the jar. Either whisk vigorously until the oil is fully emulsified, or secure the lid and shake the jar well to combine. Stir in the finely chopped green chili, cilantro, mint, and black pepper. Taste and adjust seasoning as needed (a squeeze of extra lime juice or a pinch of salt may be helpful).

Store and Serve

  • Store the sauce in the refrigerator for up to one week. Shake well before each use to re-emulsify.
