Prepare the Sweet Mango Semolina Idli Batter

  • Combine diced mango, semolina, powdered sugar, buttermilk, ghee, and cardamom powder in a bowl. Mix well to form a thick batter. Let it rest for 20-30 minutes.

Cook the Idlis

  • Grease an idli steamer or molds with ghee. Place a raisin and a halved cashew in each idli mold. Pour the batter into the molds, filling them about ¾ full. Steam for 10-12 minutes, or until the idlis are cooked through and firm.

Make the Tangy Mango Sauce

  • Heat oil in a pan. Add mustard seeds and curry leaves. Once the mustard seeds splutter, add diced mango, red chili powder, turmeric powder, and salt. Sauté for a few minutes.
  • Add 1/2 cup of water, cover, and cook until the mangoes are soft. Stir in brown sugar and mix well. Remove from heat.

Serve

  • Serve the hot, fluffy idlis with the tangy mango sauce. Garnish with chopped cashews, almonds, and shredded coconut if desired.
