Ingredients
For the Sweet Mango Semolina Idli
- 1 cup Mango alphonso or similar variety recommended, diced, ripe
- 1/2 cup Semolina sooji
- 1/4 cup Sugar adjust to taste, powdered
- 1 cup Buttermilk adjust for desired batter consistency, or yogurt
- 2 tbsp Ghee for greasing and enhancing flavor
- 1/4 tsp Cardamom Powder
- 2 tbsp Coconut shredded
- 1 tbsp Cashews chopped
- 8 Cashews halved
- 2 tsp Almonds chopped
- 8 Raisins
For the Tangy Mango Sauce
- 1 medium Mango diced, ripe
- 2 tbsp Sugar adjust to taste, brown, depending on mango sweetness
- 1/2 tsp Mustard Seeds
- 5 leaves Curry Leaves
- 1 tbsp Oil vegetable or coconut oil
- 1/4 tsp Turmeric Powder
- 1/4 tsp Chili Powder adjust to taste, red
- 1/4 tsp Salt or to taste
- 1/2 cup Water for the mango sauce
Instructions
Prepare the Sweet Mango Semolina Idli Batter
- Combine diced mango, semolina, powdered sugar, buttermilk, ghee, and cardamom powder in a bowl. Mix well to form a thick batter. Let it rest for 20-30 minutes.
Cook the Idlis
- Grease an idli steamer or molds with ghee. Place a raisin and a halved cashew in each idli mold. Pour the batter into the molds, filling them about ¾ full. Steam for 10-12 minutes, or until the idlis are cooked through and firm.
Make the Tangy Mango Sauce
- Heat oil in a pan. Add mustard seeds and curry leaves. Once the mustard seeds splutter, add diced mango, red chili powder, turmeric powder, and salt. Sauté for a few minutes.
- Add 1/2 cup of water, cover, and cook until the mangoes are soft. Stir in brown sugar and mix well. Remove from heat.
Serve
- Serve the hot, fluffy idlis with the tangy mango sauce. Garnish with chopped cashews, almonds, and shredded coconut if desired.
