Ingredients
For the Candied Papaya
- 2 cup Papaya peeled, and cut into 1/2-inch cubes, raw, seeded
- 2 cup Sugar granulated
- 4 cup Water for blanching and syrup
- 1 tsp Vanilla Extract
For Coloring (optional)
- 1-2 pinch Food Coloring red
- 1-2 pinch Food Coloring yellow
- 1-2 pinch Food Coloring green
Instructions
Prepare the Papaya
- Peel and seed the raw papaya. Cut into 1/2-inch cubes. Rinse under cold water to remove any milky sap.
Blanch the Papaya
- Bring 4 cups of water to a boil in a saucepan. Add the papaya cubes and blanch for 2-3 minutes. Remove from heat and let sit in the hot water for another 5 minutes. Drain well.
Make the Sugar Syrup
- In the same saucepan, combine 2 cups of sugar and 3-4 cups of water. Bring to a boil, stirring until the sugar dissolves completely. Add the blanched papaya cubes and simmer for 15-20 minutes, or until the syrup reaches a one-string consistency (a thin thread forms when you lift a spoon out of the syrup).
Add Flavor and Color
- Remove from heat. Stir in the vanilla extract. Divide the papaya mixture into three equal portions. Add red food coloring to one bowl, yellow to another, and green to the third. Mix well, cover, and let sit at room temperature for 18-20 hours.
Dry and Store
- Drain the papaya cubes, reserving the syrup (optional for later use). Spread the colored pieces on a wire rack or baking sheet to dry completely for several hours, until no stickiness remains. Once dry, combine the differently colored pieces. Store in an airtight container.
