Ingredients
Gooseberries
- 500 gm Indian Gooseberries amla, fresh
Candying Mixture
- 250 gm Sugar granulated
- ½ tsp Calcium Carbonate
- 1 ½ tsp Salt or to taste
- 1 tsp Rose Water
Instructions
- Prick the gooseberries all over with a fork. This allows the calcium carbonate solution to penetrate and reduce the tartness.
- Dissolve the calcium carbonate in water. Soak the pricked gooseberries in this solution for 24 hours. Drain and rinse the gooseberries. Soak in fresh water for another 24 hours. This process further mellows the tartness.
- Drain the gooseberries and place them in a pot. Add enough water to cover them. Bring to a boil, then reduce heat and simmer until the gooseberries are tender, about 20 minutes. You'll know they are ready when they can be easily pierced with a fork.
- Carefully remove the gooseberries from the pot and let them cool slightly. Once cool enough to handle, gently remove the seeds from the gooseberries.
- In a separate pot, combine the granulated sugar with 1 cup of water. Add the deseeded gooseberries. Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
- Continue simmering until the syrup thickens and the gooseberries become translucent, about 15-20 minutes. Stir in the salt and rose water. The syrup will coat the gooseberries beautifully.
- Spread the candied gooseberries on a parchment-lined tray. Allow them to air dry completely. This will give them a slightly sticky, candied texture.
- Once dried, store the candied gooseberries in an airtight container at room temperature. Enjoy!
