For the Candied Ginger

  • 1/2 cup Sugar granulated, or superfine sugar for a finer coating

Prepare the Ginger

  • Wash and peel 1 cup of fresh ginger. Pat it dry and slice it into thin, even pieces, about 1/8 inch thick.

Infuse with Honey

  • Place the ginger slices in a saucepan and cover completely with 1/2 cup of honey. Let it sit for at least 1 hour to allow the ginger to absorb the honey's flavor.

Candy the Ginger

  • Add 1/4 cup of granulated sugar to the honey-ginger mixture. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely and the mixture comes to a gentle simmer. Reduce the heat to low and continue to simmer for 20 minutes, or until the ginger is translucent and the syrup has thickened slightly.

Coat and Dry

  • Remove the pan from the heat and let the ginger cool for about 5 minutes. Meanwhile, place 1/2 cup of granulated sugar in a shallow dish.
  • Roll each ginger slice in the sugar until completely coated. Immediately separate the slices to prevent sticking. Let the candied ginger dry completely for at least 2 hours, or preferably overnight, on a wire rack or parchment paper.

  • Once dry, store the candied ginger in an airtight container at room temperature for up to 2 weeks.
