  • Finely chop all the vegetables.
  • Combine the chopped vegetables, salt, garam masala, and chaat masala in a bowl. Mix gently to combine.
  • Let the mixture rest for at least 15 minutes to allow the beetroot to color the other vegetables evenly.

Assemble and Toast

  • Spread a thin layer of butter and a small amount of coriander chutney (optional) on one side of each bread slice.
  • Place two slices of bread, buttered side up, to form a base.
  • Add about 2 tablespoons of the vegetable filling to the center of the bottom slices.
  • Top with a small amount of mayonnaise and 1/4 of the grated cheese.
  • Cover with the other two bread slices to make a sandwich.

Toast and Serve

  • Toast the sandwich in a sandwich toaster or on a griddle pan until golden brown and the cheese is melted (approximately 1-2 minutes per side).
  • Sprinkle the remaining grated cheese and mayonnaise on top.
  • Cut into halves or quarters, and serve immediately while hot.
