Ingredients
For the Vegetable Filling
- 1 Onion finely chopped
- 1 cup Bell Peppers finely chopped
- 1/2 cup Beetroot cooked, finely diced
- 1/2 cup Cucumber finely diced
- 1/2 cup Tomato finely diced
- 1/4 cup Cabbage finely shredded
- 1 cube Cheese grated cheddar or processed cheese
- 2 tbsp Mayonnaise
- 1/4 tsp Garam Masala
- 1/4 tsp Chaat Masala
- 1 tsp Salt or to taste
For Assembling the Toast
- 8 slices Bread your favorite bread
- 2 tbsp Butter melted
- 1/2 cup Coriander Chutney (optional), green
Instructions
Prepare the Vegetable Filling
- Finely chop all the vegetables.
- Combine the chopped vegetables, salt, garam masala, and chaat masala in a bowl. Mix gently to combine.
- Let the mixture rest for at least 15 minutes to allow the beetroot to color the other vegetables evenly.
Assemble and Toast
- Spread a thin layer of butter and a small amount of coriander chutney (optional) on one side of each bread slice.
- Place two slices of bread, buttered side up, to form a base.
- Add about 2 tablespoons of the vegetable filling to the center of the bottom slices.
- Top with a small amount of mayonnaise and 1/4 of the grated cheese.
- Cover with the other two bread slices to make a sandwich.
Toast and Serve
- Toast the sandwich in a sandwich toaster or on a griddle pan until golden brown and the cheese is melted (approximately 1-2 minutes per side).
- Sprinkle the remaining grated cheese and mayonnaise on top.
- Cut into halves or quarters, and serve immediately while hot.
