Ingredients
Vegetables
- 125 gm Carrot
- 100 gm Peas fresh or frozen, green
- 50 gm French Beans
Fruits
- 50 gm Apple and diced (granny smith or pink lady recommended), cored, peeled
- 30 gm Cherries pitted and halved
- 50 gm Fruit Cocktail canned, drained well, mixed
Other Ingredients
- 250 gm Mayonnaise
- 2 Eggs hard-boiled
- 1.5 tsp Salt or to taste
- 1 pinch Pepper white
Instructions
Preparation
- Dice carrots into 1/2 cm pieces.
- Cut beans into diamond shapes.
- Parboil carrots, beans, and peas separately in salted water until tender-crisp. Drain well on a clean kitchen towel or sieve.
- Dice the apple, mixed fruits, and halve the cherries. Remove cherry pits.
Assembly
- Combine the parboiled vegetables and diced fruits (excluding cherries) in a large bowl.
- Gently fold in the mayonnaise.
- Season with salt and white pepper to taste.
- Stir in the hard-boiled eggs, which have been roughly chopped.
- Gently fold in the cherries.
- Serve chilled or at room temperature.
