- 2 English Cucumbers and diced, peeled, seeded
- 1 Apple and diced, cored, medium-sized, peeled
- 1/2 cup Pineapple chopped, fresh or canned
- 2 Carrots medium-sized, peeled and diced
- 4 ounce Beans green, trimmed and cut into 1-inch pieces
- 2 Potatoes boiled and diced, medium-sized
- 1/2 cup Grapes halved, seedless
Instructions
Prepare the Vegetables and Fruits
- Cut the English cucumbers into small dice after peeling and removing the seeds.
- Dice the peeled and cored apple into bite-sized pieces.
- Chop the pineapple (fresh or canned) into small pieces.
- Dice the peeled carrots into small, even pieces.
- Trim and cut the green beans into 1-inch pieces. If using fresh, blanch them briefly in boiling water for optimal texture.
- Boil the potatoes until tender, then peel and dice them into cubes.
- Halve the seedless grapes.
Make the Dressing
- In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, mustard powder, honey, salt, and pepper until smooth and creamy.
Combine and Chill
- In a large bowl, gently combine all the prepared vegetables and fruits.
- Pour the dressing over the vegetable and fruit mixture.
