Prepare the Mango Ice Cream Filling

  • Boil the milk in a heavy-bottomed saucepan over medium heat. Once boiling, reduce heat to low and simmer until the milk has thickened slightly, about 15-20 minutes, stirring occasionally to prevent scorching. Stir in the sugar, cardamom powder, crushed almonds, and cashews. Continue to simmer for another 5 minutes, or until the mixture is creamy and the sugar is dissolved. Remove from heat and let cool completely.

Prepare the Mangoes

  • Gently cut off the top of each mango, creating a lid. Using a spoon, carefully remove the mango pit.

Stuff and Freeze

  • Spoon the cooled mango ice cream filling into the cavity of each mango. Replace the top of the mango as a 'lid'. Wrap each stuffed mango individually in plastic wrap, then place them in a freezer-safe container and freeze for at least 6 hours, or preferably overnight.

Serve
