  • Gradually add warm water, mixing with a fork until a shaggy dough forms.
  • Knead the dough for 2-3 minutes until it comes together. Add more water if needed to reach a soft, slightly sticky consistency.
  • Add the olive oil and knead for another 5 minutes until the dough is smooth and elastic.
  • Cover the bowl with plastic wrap and let the dough rest at room temperature for at least 30 minutes, or up to 1 hour.

Shape and Cook the Tortillas

  • Lightly flour a clean work surface. Divide the dough into 8-10 equal-sized balls.
  • Roll each ball into a thin circle, about 6-7 inches in diameter, using a floured rolling pin. The dough should be pliable but not sticky.
  • Heat a large griddle or skillet over medium heat.
  • Place each tortilla on the hot griddle and cook for about 1-2 minutes per side, or until lightly browned and puffy.
