  • 1 cup Spinach and chopped, fresh, washed
  • 2 Chilies finely chopped, green
  • 4 clove Garlic medium-sized, minced
  • 1 inch Ginger grated
  • 2 tbsp Oil for the dough
  • 1/4 cup Water as needed for dough consistency, or more

Instructions
 

Prepare the Spinach Puree

  • Combine spinach, green chilies, garlic, and ginger in a blender. Add 2 tablespoons of water and blend until a smooth puree is formed.

Make the Dough

  • In a large bowl, combine whole wheat flour, semolina, salt, chili flakes, and carom seeds. Add the spinach puree and 2 tablespoons of oil. Mix well.

Knead the Dough

  • Gradually add water, a little at a time, and knead the mixture into a soft, pliable dough. Knead for 5-7 minutes until smooth and elastic. If the dough is too dry, add more water, a tablespoon at a time. Let the dough rest for 10-15 minutes.

Roll and Fry the Puris

  • Divide the dough into small, equal-sized balls. On a lightly floured surface, roll each ball into a thin, round puri (about 3-4 inches in diameter).

Deep Fry

  • Heat oil in a large, deep pan or kadai over medium-high heat. Carefully slide the puris into the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry until golden brown and puffed up, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Serve

  • Serve the Palak Puris hot with your favorite tea or chutney.
