Ingredients
For the Chicken Marinade
- 500 gm Boneless, Chicken Thighs cut into 1-inch chunks, skinless
- 1 large Beetroot and roughly chopped, cooked, peeled
- 1 cup Yogurt (or milk)
- 1 tsp Garlic finely chopped
- 1 tsp Ginger finely chopped
- 1 tsp Lemon Juice
- 1 tsp Salt
For the Beet Marinade
- 1/2 tsp Salt
- 1 tsp Garlic finely chopped
- 1 tsp Ginger finely chopped
- 3 tsp Fenugreek Leaves dried
- 2 tsp Garam Masala ground
- 1 tsp Cumin Seeds
- 2 tbsp Refined Oil
For Grilling and Assembling
- 2 tbsp Butter melted
- 9 Rice Paper Wrappers
- 1 cup Cabbage julienned
- 1 cup Carrot julienned
- 1 Cucumber sliced
- 1 wedge Lemon
- Thai Chili Sauce sweet, to taste
Instructions
- In a large bowl, combine the lemon juice, 1 teaspoon each of chopped garlic and ginger, and 1 teaspoon of salt. This initial marinade helps tenderize the chicken. Rub the mixture thoroughly into the chicken thighs. Let them marinate for at least 20 minutes at room temperature, or for a deeper flavor, cover and refrigerate for longer.
- In a food processor, combine the cooked beetroot and yogurt. Purée until smooth. This vibrant mixture will tenderize the chicken and give it a beautiful rosy hue. Add the remaining salt, ginger, garlic, dried fenugreek leaves, garam masala, cumin seeds, and refined oil. Pulse until well combined.
- Coat the chicken thoroughly with the beet marinade. Ensure every piece is evenly covered for maximum flavor and color. Cover and refrigerate for at least 1 hour, or up to 8 hours, for optimal results. This allows the chicken to absorb the flavors of the marinade.
- Preheat your grill or grill pan to medium-high heat. If using a grill pan, position the pan about 4 inches from the heat source. This ensures even cooking. Lightly brush the grill grates or pan with melted butter or olive oil to prevent sticking.

- Lightly wet each rice paper wrapper with water to soften. This makes them pliable for wrapping. Lay the wrapper flat on a clean surface.
- Arrange a portion of the grilled chicken, julienned cabbage, julienned carrot, and sliced cucumber in the center of each rice paper wrapper. Add a squeeze of fresh lemon juice for brightness.
- Fold the sides of the rice paper inwards, then tightly roll up the wrap from the bottom. Serve immediately with a wedge of lemon and Thai sweet chili sauce for dipping.
