Ingredients
Dry Ingredients
- 1 cup Sorghum Flour
- ½ cup Almond Flour
- ¼ cup Coconut Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- ½ tsp Salt
- ½ tsp Cinnamon
- ¼ tsp Nutmeg
- ¼ tsp Ginger
Wet Ingredients
- 2 tbsp Flax Seeds
- 6 tbsp Water
- ¾ cup Coconut Sugar
- 1 cup Pumpkin Puree
- 1 tsp Vanilla Extract
- ½ cup Olive Oil or melted coconut oil
Mix-Ins
- ¾ cup Chocolate Chips dark or milk
Instructions
- Preheat oven to 325°F (160°C). Preheating ensures the muffins bake evenly.
- Line a muffin tin with paper liners. This prevents the muffins from sticking and makes them easier to remove.
Making the Pumpkin Puree
- Wash a medium-sized pumpkin, cut it in half, and remove the seeds.
- Cut the pumpkin into large chunks, leaving the skin on.
- Pressure cook the pumpkin chunks for 3 whistles, or until tender.
- Strain the water and let the cooked pumpkin cool completely.
- Remove the peel and blend the cooked pumpkin flesh until smooth.
- In a small bowl, combine the flax seeds and water. Set aside to thicken into a flax "egg". This acts as a binder in place of traditional eggs.
- In a large bowl, whisk together the sorghum flour, almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. This combines the dry ingredients evenly.
- In a separate bowl, combine the coconut sugar and pumpkin puree. Mix until the sugar dissolves.
- Whisk in the flax egg, vanilla extract, and olive oil until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, which can make the muffins tough.
- Fold in the chocolate chips.
- Fill the prepared muffin liners about ¾ full. Sprinkle a few extra chocolate chips on top.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve and enjoy! These muffins are delicious on their own or with a dollop of Greek yogurt and fresh fruit.
