Ingredients
Wet Ingredients
- 1 cup Pumpkin Puree homemade or store-bought; ensure it's unsweetened.
- 1 Plantain medium-sized, ripe (easily mashed)
- 2 tbsp Coconut Oil melted, liquid coconut oil
Dry Ingredients
- 1/3 cup Amaranth Flour finely ground; can be substituted with a blend of gluten-free flours
- 2 tbsp Chia Seeds
- 1.5 tbsp Flaxseed Meal ground flaxseeds
- 1/2 tsp Baking Soda
- 1 tsp Baking Powder
- 1.25 tsp Cinnamon ground cinnamon; reduce if desired
- 1/8 tsp Cloves reduce if desired, ground
- 1/4 tsp Ginger ground
- 1/4 tsp Nutmeg ground
- 1/4 cup Coconut Sugar or other granulated sugar alternative

- 1/2 tsp Salt enhances flavor
Instructions
Prepare the Ingredients
- Preheat your oven to 350°F (175°C). Prepare the pumpkin puree and set aside. Peel and puree the ripe plantain using a food processor or blender.
Combine Dry Ingredients
- In a large bowl, whisk together the amaranth flour, chia seeds, flaxseed meal, baking soda, baking powder, cinnamon, cloves, ginger, nutmeg, coconut sugar, and salt (if using).
Combine Wet and Dry Ingredients
- Add the pumpkin puree and melted coconut oil to the dry ingredients. Stir until just combined. Do not overmix.
Bake the Blondies
- Grease and line an 8x8 inch baking pan with parchment paper. Pour the batter into the prepared pan and spread evenly.
