Wet Ingredients

  • 1 cup Pumpkin Puree homemade or store-bought; ensure it's unsweetened.
  • 1 Plantain medium-sized, ripe (easily mashed)
  • 2 tbsp Coconut Oil melted, liquid coconut oil

Prepare the Ingredients

  • Preheat your oven to 350°F (175°C). Prepare the pumpkin puree and set aside. Peel and puree the ripe plantain using a food processor or blender.

Combine Dry Ingredients

  • In a large bowl, whisk together the amaranth flour, chia seeds, flaxseed meal, baking soda, baking powder, cinnamon, cloves, ginger, nutmeg, coconut sugar, and salt (if using).

Combine Wet and Dry Ingredients

  • Add the pumpkin puree and melted coconut oil to the dry ingredients. Stir until just combined. Do not overmix.

Bake the Blondies

  • Grease and line an 8x8 inch baking pan with parchment paper. Pour the batter into the prepared pan and spread evenly.
