For the Quinoa Uttapam

  • 1 cup Quinoa rinse thoroughly before using.
  • 1/2 cup Rolled Oats or semolina (suji)
  • 3/4 cup Yogurt
  • 1 tsp Salt adjust to taste
  • 1/2 cup Vegetables and your choice of vegetables, finely chopped onions, mixed, tomatoes
  • 1 tbsp Oil for cooking the uttapam

Preparing the Quinoa

  • Rinse the quinoa thoroughly under running water until the water runs clear. Soak the rinsed quinoa in fresh water for at least 30 minutes.

Cooking the Quinoa for Uttapam

  • Drain the soaked quinoa. In a blender, combine the drained quinoa, rolled oats (or suji), a little of the soaking water, and blend until you have a smooth batter. Transfer to a bowl, add yogurt and salt, and mix well. Let the batter rest for 15-20 minutes.

Cooking the Quinoa Uttapam

  • Heat a non-stick pan over medium heat. Add a small amount of oil. Pour 1/4 cup of batter onto the hot pan for each Uttapam. Spread gently into a thin circle. Top with your choice of chopped vegetables.
  • Cook until the edges are set and the bottom is golden brown. Flip and cook for another 2-3 minutes.
  • Serve immediately.

Cooking the Quinoa for Salad

  • Drain the soaked quinoa. In a saucepan, combine the drained quinoa with fresh water (following package instructions for water-to-quinoa ratio). Bring to a boil, then reduce heat to low, cover, and simmer for 10-15 minutes, or until all the water is absorbed and the quinoa is fluffy. Remove from heat and let it sit, covered, for 5 minutes.

Cooking the Urad Dal

  • Soak the urad dal for at least 30 minutes. Cook the urad dal in a saucepan with plenty of water until it is tender but not mushy. Drain well and spread on a clean cloth or kitchen towel to remove excess moisture.

Assembling the Quinoa Salad

  • Combine the cooked quinoa and cooked urad dal in a large bowl. Add the chopped vegetables, pumpkin seeds, sunflower seeds, mixed nuts, and fresh herbs. Drizzle with lemon juice, season with salt and black pepper to taste. Toss gently to combine. Serve chilled or at room temperature.
