Ingredients
For the Quinoa Batter
- 1 cup Quinoa rinse thoroughly before soaking.
- 1/2 cup Rolled Oats or semolina (sooji)
- 3/4 cup Yogurt
- 1 tsp Salt adjust to taste
- 1 cup Water for soaking quinoa and making batter
For the Topping
- 1/4 cup Onion finely chopped
- 1/4 cup Tomato finely chopped
- 1/2 cup Coriander fresh, chopped
- 1/2 cup Carrot grated
- 1-2 Tablespoons vegetable oil or ghee
Instructions
Prepare the Quinoa
- Rinse the quinoa thoroughly under running water until the water runs clear. Soak the quinoa in 1 cup of water for at least 30 minutes.
Make the Batter
- Drain the soaked quinoa. In a blender, combine the soaked quinoa, rolled oats, and a little of the soaking water. Blend until a smooth batter forms. Add more water as needed to achieve desired consistency.
Combine and Rest
- Transfer the batter to a bowl. Stir in the yogurt and salt. Mix well and let the batter rest for at least 15 minutes.
Cook the Uttapam
- Heat a non-stick pan or griddle over medium heat. Lightly grease the pan with oil or ghee.
Add Batter and Toppings
- Pour 1/4 cup of batter onto the hot pan for each uttapam. Spread it gently into a thin circle. Sprinkle the chopped onion, tomato, cilantro, and grated carrot evenly over the top.
