  • In a large bowl, combine the mashed potato, boiled quinoa, frozen green peas, chopped green chiles, finely chopped onion, chopped cilantro, lime juice, garam masala, salt, and corn flour.
  • Mix all ingredients thoroughly until a thick dough forms. Corn flour helps bind the mixture, creating a cohesive dough.
  • Shape the dough into small, flat patties or tikki. For best results, chill the patties in the refrigerator for 10-15 minutes. This helps them firm up and prevents them from breaking apart during frying.
  • Heat a thin layer of olive oil in a large skillet over medium heat. Once the oil shimmers, carefully place the chilled tikki in the skillet, ensuring not to overcrowd it.
  • Cook the tikki for about 3-4 minutes per side, or until they turn golden brown and crispy. Flipping them gently ensures even cooking and a beautiful crust.
  • Remove the cooked tikki from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
