For the Batter

  • 1 cup Semolina rava or sooji
  • 1 cup Yogurt sour curd or dahi
  • 1.5 tsp Salt or to taste
  • 1 tsp Eno Fruit Salt
  • 1 cup Water add more as needed for desired consistency, approximately

For the Topping

  • 1 Onion finely chopped, medium-sized
  • 1 Tomato finely chopped, medium-sized
  • 1/4 cup Coriander finely chopped
  • 2 tbsp Oil for cooking

Instructions
 

Prepare the Batter

  • In a large bowl, combine semolina, yogurt, and salt. Mix well.
  • Gradually add water, mixing continuously until you achieve a thick, pancake-like batter. Let the batter rest for 20 minutes.

Prepare the Topping

  • While the batter rests, finely chop the onion, tomato, and coriander leaves. Combine them in a separate bowl.

Cook the Uttapam

  • After 20 minutes, check the batter consistency. If it's too thick, add a little more water and mix well to achieve a spreadable consistency. Add Eno fruit salt and mix gently.
  • Heat a non-stick tawa (griddle) over medium heat. Lightly grease the tawa with oil using a paper towel.
  • Pour a ladleful of batter onto the hot tawa and spread it gently into a thin, round circle.
  • Drizzle a little oil around the edges of the uttapam.
  • Top the uttapam with the prepared onion, tomato, and coriander mixture.
  • Cover the tawa and cook for 2-3 minutes, or until the bottom is golden brown.
  • Drizzle a little oil over the toppings, then carefully flip the uttapam and cook for another 1-2 minutes, or until the other side is cooked through.
  • Remove the uttapam from the tawa and serve hot with your favorite chutney or sambar.
