Ingredients
Dough
- 1 cup Whole Wheat Flour whole
- 1 Tbsp Bajra Flour
- 1 Tbsp Jowar Flour
- 1 Tbsp Ragi Flour
- 1 Tbsp Sattu Flour
- 1 Tbsp Corn Flour
Filling
- 1 cup Vegetables (such as cabbage, and scallions), carrots, chopped, green, spinach
- 1 Tbsp Olive Oil
- 1 Tbsp Fruit Vinegar
- 1.5 tsp Salt or to taste
- 1 tsp Herbs mixed
- 1/2 tsp Chili Flakes or to taste, smoked
- Tomato-Garlic Sauce for serving
Instructions
- In a large bowl, combine the whole wheat flour, bajra flour, jowar flour, ragi flour, sattu flour, and corn flour. This blend of flours creates a nutritious and flavorful dough.
- Gradually add warm water to the flour mixture, mixing until a smooth and pliable dough forms. Knead the dough for 5-7 minutes until it becomes elastic. This develops the gluten and results in softer momos. Cover the dough and let it rest for at least 30 minutes. Resting allows the gluten to relax, making the dough easier to work with.
- While the dough rests, prepare the filling. In a separate bowl, combine the chopped vegetables, olive oil, fruit vinegar, salt, mixed herbs, and smoked chili flakes. Toss well to ensure the vegetables are evenly coated.
- Divide the dough into small, equal-sized portions. Roll each portion into a thin circle. Place a spoonful of the vegetable filling in the center of each circle.
- Fold the dough over the filling to create a half-moon or crescent shape, pleating the edges to seal. Ensure the momos are tightly sealed to prevent the filling from leaking out during steaming.
- Fill a steamer pot with water and bring it to a boil. Arrange the momos in the steamer basket, ensuring they are not overcrowded. Steam the momos for 10-12 minutes, or until they are cooked through and the dough becomes translucent.
- Serve the steamed momos hot with tomato-garlic sauce. Garnish with fresh herbs, if desired.
Recipe Notes
Good To Know
- For a softer, more pliable dough, let the mixed millet and wheat flour dough rest for at least 30 minutes before rolling; this helps the flours hydrate and makes shaping the momos easier.
- If the millet wrapper feels prone to cracking, lightly brush the edges with water before pleating to seal them securely and prevent filling leakage during steaming.
- Experiment with fillings by adding crumbled paneer, tofu, or even finely shredded greens like spinach or methi for extra nutrition and flavor variations.
- Leftover steamed millet momos can be pan-fried the next day for a crispy texture—simply heat a little oil in a non-stick pan and sear both sides until golden brown.
Expert Tips
- For perfectly shaped momos, use a thin, sharp-edged circular cutter to create uniform dough rounds.
- Don't overcrowd the steamer; ensure enough space between momos for even cooking.
- Serve your millet momos with a flavorful dipping sauce, such as a spicy chili-garlic chutney or a tangy tomato-based dip.
Storage Instructions
- Store leftover steamed momos in an airtight container in the refrigerator for up to 3 days.
