- In a large pan over medium heat, combine the jaggery and water. Stir constantly until the jaggery melts completely and forms a smooth syrup. This prevents burning and ensures even caramelization.
- Continue to cook the jaggery syrup, stirring occasionally, until it turns a light golden brown and develops a rich, caramel-like aroma. This indicates that the sugar is caramelizing properly.
- Once the syrup reaches the desired color and aroma, quickly stir in the honey, ghee, and cardamom powder. Remove the pan from the heat. The residual heat will help combine the ingredients.
- Add the roasted mixed nuts and peanuts to the jaggery mixture. Stir well to coat the nuts evenly.
- Line a baking sheet or flat surface with parchment paper greased with ghee. Pour the nut mixture onto the prepared surface and spread it evenly into a thin layer using a greased spatula or rolling pin.
- While the chikki is still warm and pliable, garnish with sliced pistachios. Gently press them into the surface.
- Allow the chikki to cool completely at room temperature until it hardens. Once hardened, break or cut the chikki into desired shapes or squares.
- Store the dry fruit chikki in an airtight container to maintain its crispness and freshness. Enjoy!
